1 handful coconut flakes
6 ice cubes
Optional: 1/2 c. unsweetened fruit (peach) juice
1 squeeze lime juice
1/2 c. organic unsweetened coconut milk
Blend ice and fruit juice in Vitamix until smooth (about 1-2 minutes, not too long or it will become soup). Pour icy in small bowls and drizzle with coconut milk and lime juice and top with mango and coconut flakes. This is my low carb version of the traditional asian (Thai) lychee ice dessert which is sky high in sugar due to the glycemic index of the lychee fruit.
