3/4 c. organic yellow corn meal
1/4 c. organic buckwheat
1 medium organic apple, chopped
1/2 onion, chopped
1 t baking powder
1 t baking soda
1 t sea salt
1/4 c. unsweetened organic apple sauce
1 free range egg
2 bananas, mashed
2 T. honey or agave nectar
1 T. whole flax seed
2 T. virgin coconut oil
Seasonings:
cinnamon
cloves
Mix all dry ingredients and spices; mash banana and mix with egg, applesauce, apple, and honey. Combine wet and dry ingredients and mix thoroughly. Melt oil in pan and grill cakes for 3-4 minutes per side. Serve hot with Smart Balance and/or apricot jam. This makes a great side to apricot mustard chicken.
