Apple and Cheese Omlette
1 medium organic gala apple, chopped
1/2 c. shredded rice vegan mozzarella-style cheese*
4 eggs
Seasonings:
2 dash sea salt (to taste)
2 T. cinnamon
1 dash cayenne pepper
1 T. organic virgin coconut oil
Melt oil in pan and add scrambled eggs. Cover and cook over medium low heat for 3-5 minutes. Meanwhile, saute chopped apple with some coconut oil and spices; when the apple is soft (about 3 minutes), add apple and cheese to eggs. Flip egg over apple and cheese and cover, removing from heat. Let sit about 2 minutes or until cheese melts.
*Cow, soy, or nut-based cheese of choice will also work
