Applesauce Raisin Spice Muffins

Gluten Free Apple sauce Raisin Spice Healthy Bran Muffins Dairy Free

2/3 unsweetened organic applesauce
1/2 c. organic brown rice flour
1/4 c. ground flax
1 egg, beaten
1 t. non-aluminum baking powder
1 t. baking soda
1/4 c. organic raisins
2 T. honey or agave nectar
1 T. organic sugar (or more agave)
1 T. cinnamon
5-6 whole cloves
1 t. nutmeg
dash cayenne pepper

Mix everything in a large bowl until smooth. Preheat the oven to 350 degrees and spray a large muffin tin with nonstick spray. Pour the batter into the muffin tin, filling each hole about 1/3 full. Bake at 350 degrees for 12-15 minutes or until a toothpick comes out clean.

These are great dense muffins that remind me of bran muffins. This is a great low fat dessert, snack, or breakfast; the applesauce replaces butter, shortening, and oil!

It makes me want to hang up my gluten free blogging hat (even though I've just started)leave it to all the wonderful bloggers out there and concentrate on my artwork! Oh well I have to cook anyways so I might as well take some pics of it. :)

    Don't give up cooking- post your stuff and join this crazy gluten free subculture... we love new people and ideas. I looked at your blog and it like it... funny you feature Target going "organic." Jon and I are getting married next spring and we registered at Target... did you know their organic cotton towels are cheaper than the normal duds? Ha! I love it

    These muffins look tasty and nutritious. How many muffins does this recipe yield? I am thinking of using my sugar-free Harvest Berry Applesauce instead of regular applesauce and subbing dried cranberries for the raisins. Would you change the spices for these ingredients? I would love to squeeze some of his beloved cardamom into this recipe...maybe instead of the cloves or cayenne. Thoughts?

    Your ideas sounds great! Yes, cardamom (or gram masala) would be an excellent substitution for the cayenne and cloves. This recipe yielded about 15 muffins, though you could make it stretch more or make the muffins larger if you wish. I tried to go for medium sized muffins so we had enough left after I scarfed them down right after they finished baking :)

  6. Cindy, I don't know exactly what trajectory led me to your blog, but your imaginative recipes are just wonderful! I just pulled a batch of these muffins out of the oven and they are flavourful, moist and delicious! I added some chopped, dried apricots and some vanilla essence for a bit of a twist. Thank you so much for sharing these great recipes!

    Do you grind up the cloves? How do they work? I only have ground cloves; how much should I add? Also, how crumbly are these muffins? I was thinking that they might work well for a cross-country road trip...but I don't want to make a mess :)
