4 eggs handful fresh cilantro or parsley 1/2 c. cooked and drained spinach (or fresh) 1/2 lb. asparagus spears, steamed (or raw) 1 T. extra virgin olive oil
Seasonings: crushed red pepper flakes oregano garlic powder sea salt and pepper
Spray pan with nonstick spray and add asparagus and spinach. Saute for 2-3 minutes or until veggies are warm; remove from pan. Scramble eggs and add to fry pan with olive oil and seasonings. Cover eggs and cook 3-5 minutes on low until done; add veggies and serve.
